iOS does seem to at least allow you to change the contactless payment app now. Probably that’s an EU-only feature though.

Personally I’d go with Signal. Matrix has a certain jank level IME, for example rooms can get desynced between homeservers and the only way to fix is to create a new room and abandon the old one. Not sure how often that happens for small scale use though, I’ve only seen it in large rooms.

All of the names containing “rus”/"русь"¹ ultimately come from Русь from where Russia and Belarus both inherit their names.

So, the name of the country Belarus literally means “White Rus”, and it seems like the Dutch word I assume you’re talking about for the country (Wit-Rusland) was borrowed from the Russian word белоруссия and (incorrectly, I guess?) translated as white (бело) + Russia (руссия) despite the “руссия” also in this word referring to Rus and not Russia (spelled differently as Россия).

¹ the word Россия, too, but from what I can find it is borrowed from Greek and the others including Русь from Arabic, hence the different vowel

On macOS, the correct thing to use is usually NSUserDefaults API, or - [NSFileManager URLsForDirectory:inDomains:] with NSApplicationSupportDirectory (gives a list of paths to find your config file in, like XDG_CONFIG_DIRS)
